Matcha Tea

Matcha tea has a sweet earthy and savory flavor, and a vibrant green coloration. Matcha is made from tea leaves that are shade grown, covered , which contributes to the green color, and high chlorophyll content. Matcha is also high in the amino acid; L-theanine contributing to a relaxing and calming feeling. The greener the color the better. The crude tea leaves used for Matcha are called Tencha.  They are softer and supple than the more-developed harder leaf. More nutrients are sent to the developing leaf when the tea is covered, which is why Matcha has such a vibrant color and healthy attributes. Instead of rolling the leaf when harvested (like Sencha), Matcha leaves are laid flat to dry and then de-veined, de-stemmed and referred to as tencha, then stone-ground to get this fine, bright green powder.
